https://a.co/d/0a6WHIhR Is pretty inexpensive relatively for beginning sharpening and 325 diamond should be pretty quick with kitchen knives to form an apex and burr. I can reprofile and switch to the 1200 diamond side to refine in just a couple minutes. 1200 to a strop with some compound is all I need for most anything. If you're going for higher end the Atoma someone listed above is excellent.

I have advice on a relativity inexpensive stone that I don't need water or oil, use it dry only, and clean by dusting off with dry towel. And it's fast. That's all you need to know. It's actually that simple. Great job to that poster! In addition, as a beginner, I recommend to work on only one grit. 1000 seems to be a sweet spot for beginners, bc it does half coarse and half polish at the same time, and it's "kinda" fast. Lower grits are faster, some like 300 are really, really fast at developing a burr. It depends on how hard your metal is, and what coarseness your stone is. For VG10, I'd use anything from 600-800. When you get good, this grit size should get you a new edge in less than 5 minutes. Using one grit size as you move from beginner to intermediate, will help you learn what you are actually doing, and to focus more on what matters(the edge) and to understand better, later, why you would want to spend your time to move through stages of grit sizes(each step in grit size doubles your time). VG10 is going to teach you well because it's a medium difficulty metal to get a new edge. And also, it doesn't stay as sharp for that long as you'd think. You'll learn why honing is so valuable, which is the stage in-between sharpening and stropping, to save to time from having to go through the whole sharpening process, and also from wearing away your edge faster than needed. A simple work sharp precision adjust as only 80$ at Walmart. 320 and 600 grit diamond stones plus a fine ceramic. Not only will you get a perfect edge but you won’t break the bank! If you want to go freehand route then be prepared to spend well over 100 dollars. Most of use spend more than that on a single stone! With that being said Cheefercut sells a double sided vitrified diamond stones (400/100 grit) for around 100$. Also if you want an excellent 1 and done stone THELITE sells a 1000 grit vitrified diamond stones plus a strop for 100$. It cuts fast and leaves and excellent edge. However if it’s your first time freehand can be frustrating until you get that hang of it, probably 20 or more knives in before you find your groove and start getting quality results. Cheapest route would be a double sided diamond plate from Sharpal. It will still get you good results but deburring can be tricky without a ceramic rod and strop.
