I have and I like the VIOFO A229 Plus Dash Cam Front and Rear, it's highly rated and has a good daytime/nighttime sensor switch. You can look through r/dashcams for further well-regarded dash cams. In terms of looking seamless and hidden, it's all just a matter of getting it installed well, which includes tucking the cables away and out of sight. Best Buy will do a front & rear dash cam install for $150. Car stereo shops also offer this service but youll need to call your local shops and ask for their prices. Keep in mind youll need a SD card, which is what the video files get recorded onto; some dash cams come with this and some don't. The one I listed doesn't. They tend to not come with a great SD card anyhow. I recommend a high endurance SD card like this one since it’ll be continually re-writing data over itself, and at least 128gb. And then you'll also need a SD card reader to plug into your computer, thankfully those tend to be very cheap.

Don't bother with the cable. Just get a card reader that supports compact flash and SD cards.
