If you just want to measure power consumption you could skip the smart plug and just get a “kill-a-watt” type power measurement device. You could buy just one of these and connect it to each device in turn. Just an option since many of the functions of a smart plug you didn’t seem to have a use for long term. This is just a stand alone device, it has no connectivity so you would have to read the info off its screen but they are inexpensive and accomplish what you were asking for. Here is a generic one from Amazon for $12. https://a.co/d/05DpEJ9q If you want the power usage reported to Home Assistant automatically I have several Zooz ZEN15 smart plugs that use zwave. They are around $50 each from Amazon. Your home assistant would have to have zwave capabilities. https://a.co/d/0ezGx7yi

This $10 device may help... This may satisfy OP's curiosity. Our L1 supply is via a 20' long 12-3 AWG extension cord into which we plug the $10 device, then plug our supplied charge cable into the output of the $10 device. The device then measures the electrical use and creates a running total. So, if you like you could charge for a week/month/year and read the device screen and see your exact use for charging the EV.
