I also recommend Inkbird temperature controllers that makes fine-tuning a lot easier. It also saved my fish from freezing to death once because it has a loud alarm and woke us up in the middle of the night, it was really cold and all my fish were barley moving so if we waited until morning I bet they all would have died. If this winds up being a problem (temps drop too much), you can either replace it with a bit of copper wire (don't do that) or buy a cheap replacement with a higher temperature limit for a couple of bucks. Pop off the fan cover, unscrew the old one, and screw the new one in. Super easy.

I've been using an identical model of that oven along with this temperature controller. No PID mod necessary. You'll have to nail down exactly where you need the knob to be to maintain the temp you want without getting too hot too quickly.
