As long as your projector doesn't require power over USB-C, you can use bidirectional cables like this to go from DisplayPort to USB-C (using DisplayPort Alt mode): https://www.amazon.com/dp/B0DBVRRJSD Non-Thunderbolt hubs that support Displayport Alt mode on downstream facing USB-C ports are uncommon, but they exist. Ones with multiple of these ports would be very rare. If you go the USB-C hub route, you might need to go with a Thunderbolt hub simply because DP Alt mode is a requirement on all Thunderbolt ports.
