I don’t know if this would work but what if you did something like this https://a.co/d/0gkqw15g (the smaller shelf) in front of the taller part of the counter and then an appliance sliding tray like this https://a.co/d/0038AMQu on top of both the taller part of the counter and the shelf, then you can slide the machine forward when using and back when not?
