I was gonna say, Warhammer is a great option here- Victor Saltzpyre is probably one of my favorite characters and warrior priest is a great class to play But seconding oath of swords, David Weber still writes some really good stuff despite having needed a better editor (or an editor at all) since 2016. And I haven’t read the light novels but the Faraway Paladin is a good example of what you’re looking for- I’m probably going to pick it up myself when I’ve finished my current book series One I haven’t seen mentioned is Of Deeds Most Valiant. About a beggar paladin who is sent to meet up with representatives of a bunch of other paladin orders for a quest. I enjoyed it a lot more than I thought I would
