I have never used sear grates. I cooked the oiled and seasoned chicken legs at 225 for about 35 minutes. Then I turned up the heat to 375 and let it go till I hit 185 internal. I hit them with some sauce and finished at 350 till sauce was tacky. I haven’t tried to sear yet, but I read others searing directly on the cast iron heat deflector or setting a cast iron pan directly on the deflector and searing in the pan. I plan on cooking pork chops this week and hopefully will get a good sear. I kept my Weber summit kamado just in cast iron ran into the problem with not being able to get a good sear. Another way people are getting sear marks is by replacing the stainless steel grates with cast iron like these. I may do it if needed. But I prefer stainless due to maintenance being far superior to cast iron. https://a.co/d/0h4157Ew
