Don't mix pellets and chop, you'll just end up wasting pellets. I feed chop exclusively to my birds, and offer chop to fosters but supplement with pellets so their new family has options, and I just keep them in separate bowls. Some people do chop in the morning and pellets in the afternoon/evening. If you do offer chop, make sure it's actually complete and balanced; if you're just offering some of whatever you've got on hand, offer that in addition to a complete pellet or as a treat (on skewers for enrichment, or in bowls occasionally). Some good resources for parrot nutrition: This book, which includes recipes and a thorough breakdown of parrot nutrition Dr Jason Crean, a biologist specializing in avian nutrition BirdTricks has seasonal recipes that are a good starting point if you're overwhelmed. These recipes should not be followed exactly, in my opinion (and backed by avian vets) because they do include cooked grains and pasta as a staple, as well as some beans that are VERY unsafe unless thoroughly cooked (far safer to simply sprout safe beans, say the experts). But if the other book is too technical, these recipes are a fine blueprint on which you can improve. (And I'm sure you can find them for free somewhere... not that I would ever encourage such things 😉🏴‍☠️)
