The TS5 Plus can support a 5k2k monitor at native resolution and 100Hz. Any Thunderbolt 5 dock should be able to, and if my math is correct, all Thunderbolt 4 docks should be able to as well. It should definitely work over DP 1.4 (though a second monitor won't work through a dock), should work over DP 2.1 with multi-monitor support, and HDMI 2.1 claims to also work in the monitor calculator I checked, though multi-monitors may not work. As I've alluded to throughout this thread, proper HDMI 2.1 support is reliant on both the computer and adapter supporting it. macOS is particular about what HDMI 2.1 adapters officially work, and unofficial methods that may work when connected directly to the computer don't always work through a dock. This probably explains the discrepancy between Windows working but macOS not working for your setup, which is actually at the heart of this post's topic even if it hasn't been directly mentioned yet. If you are willing to experiment some more, I would recommend you grab the CalDigit USB-C to HDMI 2.1 adapter and see if that works for your M5 Max setup. There are some other options out there that should work as well, but I don't actively keep track of them. I have heard Cable Matters has an adapter that works, but we haven't validated ourselves.
