I was gf for a while and had way better luck finding gf recipes that used a mix of flours than buying a gf blend and I never found a decent store bought bread. Baked to Perfection had a really great baguette recipe that was super easy to make. The dough can also be frozen, so I made a big batch and baked one daily for a while. I've been thinking about making them again even though I can eat gluten now. I used to bake a lot and they satisfied my diesire for a crusty artisan style bread. https://a.co/d/0hnJU9f1
