While I am not going to be doing the traditional al pastor thinly sliced pork stack, I was thinking of taking the sauce that I purchased and using it on the outside of the pork shoulder. I do not have the best smoker so I usually would do smoke first and then I put it into the sous vide. I’m not exactly sure where I’m going to apply the sauce. I probably will not be doing this for a few weeks.
