I was not a fan of the stock flat mountain bike style handle bars, because the flat near 0-degree angle hurts my wrists. As soon as I installed these (https://www.amazon.com/dp/B072347G4M?ref=ppx_yo2ov_dt_b_fed_asin_title), the bike became insanely comfortable for my wrists. I also have the adjustable stem set relatively high (about 60-70 degrees, which is a lot), but I have a bad back so a comfortable upright riding position is a priority for me personally (upright posture, very little pressure on my wrists). I just finished a 45 mile ride yesterday and the only discomfort was the saddle (rode the stock saddle with padded gel cover). Once I swap the saddle to something like a Brooks B17, I should be able to do very long 70+ mile rides on this without much discomfort. For your use case, pay attention to how the wrist angle feels on the stock bars. If it's good, then simply adjusting the stem will do the trick so your riding position is not too aggressive (resulting in neck / wrist pain), but it won't feel like a beach cruiser. My bike feels very much like a beach cruiser, but that's on purpose. I highly recommend getting the suspension fork version for reduced impulse to your wrists.
