For regular grilling, I remove 6 pans, replace the other grate (not shown), and leave just the two pans with wood chips on the right most side. I fill the 2 trays maybe 1/3 when doing mid-week burgers/steaks/dogs. When smoking I fill them full and add lit briquettes to fire them off (which you can see in the brisket pic, which was a mid-cook reload).
