That sounds like a nice, beefy power bank and won't be an issue. Yeah I think the USBA cable with the bag is going to be a problem. Even if the mini-hub existed, it would be splitting your >1amp -booo. Another consideration is many USB cables are power-only and don't move data. Assuming the cord is the cheapest one available and power only, it wouldn't be able to negotiate PD. There are some small, cheap hubs with pass-though charging, but the other ports will be limited. This is a data hub, not a charging station. https://www.amazon.com/Anker-Display-MacBook-Thinkpad-Laptops/dp/B0BQLLB61B?th=1 good luck!

Numbers will read excel files and keynote will read PowerPoint. To save files to the Microsoft formats, you will need to choose export or save as ( I’m not sure which but one of them will work). Just choose the correct file format. As long as you have WiFi, you’ll be able to connect to the internet, just like any windows computer. For basic use, 8gb will be fine. You’ll most likely want to get a usb-c hub such as this one. It should meet your needs.

I just connected my mac directly to the monitor via the HDMI and the issue is completely gone, thank you a lot for that it really helped me narrow it down. My plan currently is to use a docking monitor and put my entire setup on that instead of my current "dock" (which was this). Is that a good idea?

I would contact Anker. Anker is a good company. Based on Amazon reviews this is a summary of users complaints with its HDMI port: Based on customer feedback, here are the HDMI-related issues reported for the Anker 332 USB-C Hub (5-in-1):HDMI port stops working — Some customers report the HDMI port stopped functioning after a period of useHDMI flickering — At least one user noted the HDMI connection flickers and requires adjusting the cord to maintain a stable connection4K limited to 30Hz — The HDMI port maxes out at 4K@30Hz (not 60Hz at 4K)No HDMI 2.0 — The hub lacks HDMI 2.0, which can cause issues getting true 4K output, especially on devices like the iPad ProOnly one HDMI port — Limited to a single external display; cannot drive multiple monitors via HDMIHDMI to DP/VGA adapters not recommended — Anker explicitly warns against using HDMI-to-DisplayPort or HDMI-to-VGA adapters for stable screen mirroringCompatibility issues — Some users with external monitors report the display doesn't connect properlyOverall, HDMI reliability is one of the more common complaints, with about 36% of reliability-related reviews being negative. Also, some docks requires power to work reliably. Make sure you try testing it with the Apple’s power adapter connected to the dock.

Just get these two things and you'll be good to go overall. Don't forget to plug the HUB on the left USB-C port and charge your Neo on the right USB-C port.
