This may be sacrilege in this sub, and I'm just passing through. I own a deli and I chop onions and carrots like, a lot. Sometimes chicken and other random stuff. I have the santuku knives they sell at Sam's, they're great. 2 knives for 14 bucks. I have this sharpener I bought at Walmart and it puts an edge on em.
