Any kind of bench/mount/bag will be crucial for zeroing a pistol. Use 3 - 5 shot groups to determine where the zero actually is. Those splatterburst sight-in targets are incredibly helpful. Now, the "NRA Basics of Pistol" course which I just finished says you're supposed to rezero with all new ammo. Which makes sense logically. But at 15 or 25 yards, I don't think it makes that much of a difference, so I just roll with it. There's always going to be some kind of variability. I watched a video of a barrel comparison using a Ransom Rest and even a match barrel will have some variation in shot placement across a 5 shot group. The match barrel's group was much tighter than the OEM. IMHO and YMMV.
