I use some Japanese white ash (like this) in a bowl. The fluffy ash allows the incense stick to burn cleanly and completely, and as it mixes with incense ash it can be used again and again. Stick holders I avoid because they always result in unburnt stubs, and when I really love an incense, I want it all to burn :) I like the suggestion of using different bowls for variety.
