I see you're dealing with the 2 creation stories in Genesis. The first, Gen 1:1 through part of Gen 2:4 and the second from Gen 2:4 through 2:25. They are different narratives from different sources. Read about the Documentary Hypothesis and the Torah will make more sense. There are variations and derivatives, but you'll get the gist of how the Torah was composed. As far as gender, the book God, an Anatomy might be of interest. Not sure it'll answer your questions, though. If God was tied to gender he would be tied to genitalia I know how silly I sound but this would make the argument for a mother as well. And that's not taught.
