I've started smoking a chuck roast, letting it drip into beans, then finishing it in a pressure cooker. It'll lose the smoke flavor, but maybe you could add some liquid smoke? 1 lb pinto beans, soaked according to package directions, then drained 5 cups chicken broth (maybe 4? I use 6 cups in the smoker, but that seems a bit too much) 1 large onion, diced 3 jalapenos, diced 4 cloves garlic, minced 1 can fire roasted tomatoes 1 tbsp chili powder 1 tsp cumin 2 tsp salt 2 lb chuck roast Liberally apply salt and pepper to the outside of the chuck roast. Suspend it over the beans inside of the pressure cooker using something similar to this (this one looks too short to me) https://www.amazon.com/HULISEN-Stainless-Multifunction-Basket-Pressure/dp/B075SXP2Z8 Pressure cook for about 40 minutes. Might take some trial and error to figure out how tender the meat is.
