I have used ceramic for years and traditional non stick before that. I have silicone turners and spoons and the like. They never worked great for eggs. Ceramic likes a high temp oil. Butter and olive oil and especially the sprays like Pam are kind of no goes. I use a spray bottle of peanut oil on mine generally. Coconut oil is good too. Lately I have been using ghee which is clarified butter with a higher smoke point. This has helped with eggs. Finally I got a set of these https://a.co/d/0cIQdiZg I went looking for a good turner that would not scratch the pans. I found these through reddit and the reviews back up reddit. They are great. I do a lot of fried eggs and the silicone turners killed them a lot. These are like little nylon razor blades that don't hurt the pan compared to the blunt edge of silicone. Also that happens to my scrambled eggs if my pan is not hot enough when I add the eggs. I think (so this is not a proven fact) that if the pan is not quite hot enough the eggs lift the butter (or whatever pan lubricant you are using) and absorbs it and then sticks to the pan. I like to get the pan to about 300+F before adding my eggs. I want them to start sizzling the second they hit the pan. But not to scortch.
