It's not so much that anchor trolleys make anchoring more safe, the benefit they give is being able to easily position where the anchor is attached to the kayak so you can use wind or current to change your facing. Run the anchor to the back, and you'll put the wind at your back, run the anchor forward, and you'll put the wind in your face. Or do any variation in between. In more extreme cases anchoring point can become a safety issue, say if you've clipped the anchor mid ship and you caught a strong wind or wave broadside, that could potentially swamp or tip you. But I've found from experience (where I live now strong winds are just a part of life, I've been caught in multiple wind storms while on the water) that isn't anywhere near as risky as you'd think, especially in a sit on top with open scuppers. There is actually a product for your tree method in the pic, it's called a brush gripper. I used to always carry one of those with me along with an anchor specifically to be able to do what you've done.
