I'd start with the Harmony Aran and Fair Isle Stitch Guide and Alice Starmore's Book of Fair Isle Knitting. I recognize some of the stitches used in the one-color sections and believe you might be able to find them in the first couple of volumes of Harmony Stitch Guides.
