I got this kit, though it has a few pieces I've never used: https://a.co/d/0cskQ42c All the pieces are good quality, and all I've added are some OXO bottles, a pancake batter dispenser, and a giant basting lid from Blackstone (because I couldn't find anyone else who made a huge rectangular one). Around 20 pieces is more than enough, so long as you have a couple long spatulas, a sharp burger flipper (for peeling up smash burgers), a scraper, and a burger press. Beyond that are largely specialty tools that won't be used much. Read reviews and pay attention to people calling out sub-par stainless steel.
I paid more for a Cuisinart set that's similar, and I've been pleased, but... You need one solid and one perforated long spatula, a burger press (smooth bottom, steel is better than cast), a wide and sharp spatula for smash burgers, a good scraper, and maybe a basting lid. You'll need knives and other prep stuff that's not griddle specific, obvs. Then bottles. Lots of bottles. I have a set of 12oz OXO bottles for oils and a 32 oz Blackstone bottle for water.
