Moved to NYC from Houston about 8 years ago, no garbage disposal was one thing we were saddest about. I have three of these which pretty much solved the issue: https://www.amazon.com/Pack-Strainer-Stainless-Catcher-Effective/dp/B094YSF219 When you're done doing whatever in your sink that will involve this catching stuff: Pull it out, bang it into the trash can, put it in the dishwasher, swap in a clean one. Yes I end up putting my hand on some particulate in this process, but not a big deal and other than that minor issue I don't really miss the disposal. (Note: We do very little hand washing, so that's part of why this works. Dishwasher is more hygienic and more water/energy efficient.) In fact, even though we moved into a new place with a disposal, I still do it this way most of the time because I worry about the pipes clogging. Run the disposal less than once a week. Cat is adorable!

Get a stainless steel screen (like your window screens). You can collect any food debris in it, pull it out, and just dump the debris in the trash. Similar to this, except whatever fits your drain: https://www.amazon.com/Pack-Strainer-Stainless-Catcher-Effective/dp/B094YSF219
