Nice! I have mine mounted in my 10" rack. I think I am using the same NVMe card as you. Is it this one? Edit: Also, I would suggest putting the fan on. It does help with the temps with a heavy load.
Slowing down after some time is normal for SSDs that use QLC flash. (What are the model numbers of your SATA drives?) Getting an M.2 drive with QLC flash will give you the same problem later. NVMe drives have much lower latencies than SATA drives. Using an M.2/PCIe ×4 adapter is a good idea because you will be able to reuse the M.2 drive when you upgrade to a motherboard with multiple M.2 slots later. At the moment, the prices for a SATA drive and an NVMe drive with good TLC flash are similar.
