The way I have my Plex server setup is to use a tiny PC. I got one with a 14th gen Intel i7 and an Nvidia GPU. I bought a 6 bay 10 gigabit USB C external hard drive enclosure for like $200 and just have it connected to the PC (it has a single 10 gig USB C port). I'm only using 4 bays so far so I should be good for a while. They also have and 8 and 4 drive units.
