You need a thunderbolt 3 or higher dock to support multiple monitors without mirroring. Or you could connect one monitor directly to the Mac and the other monitor to the dock. I recommend the CalDigit E5 - Thunderbolt 5 Element 5 Hub. I use this dock with a couple of USBC to DisplayPort Cables for my dual 4k monitor setup. These cables have been tested and support 4k@120hz.
