I would double check that your florist allows you to partially DIY your flowers. Some don't and include that in their contracts (largely to avoid DIY work being attributed to them). For the sprays, these are completely doable if you want to and there's a myriad of options. For mechanics, these are typically done with a foam cage that is then zip tied on. Something like this. If your flowers are real, you wet the foam, stick the flowers in and attach. If your flowers are fake, you use a different type of floral cage with dry foam (less crumbly) and attach. If you use fake flowers, you could also do something like pool noodles. There are tutorial on youtube and I believe on sites like Flower Moxie. For where to get flowers: Artificial ones: Amazon, Michael's, Ling's Moment, etc. Real: Costco, Sam's Club, Flower Moxie, Fifty Flowers, Trader Joe's, etc. I would look around for past write ups of how people DIY and where the best floral bang for your buck is. There are various trade offs with the above, but for any of these, your total price (even if you go with real flowers) will almost certainly be under $900.
