Good to know. Glad I went with the more traditional option. I bought this Northern Thai cookbook after skimming it at the library, and highly recommend it. The recipes are pretty intensive (e.g., all the curry pastes are made from scratch in a mortar & pestle), but the end product is worth it: https://www.amazon.com/Kiin-Recipes-Stories-Northern-Thailand/dp/0735236410 There are a couple of recipes that involve grilling, but the vast majority are done in a wok or skillet.
