I was in virtually the same position a couple weeks ago with the same questions (same minipc, same uses). I wanted a way of connecting 2 larger sata hdds externally. I ended up replacing the unused m.2 wifi card with this. I powered the drives with this And this Quick note, ssds would require 5v rather than the 12v these items provide. You are also probably better off using a pcie riser and sata card in that case as well, as the m.2 slot has limited bandwidth. Its fast enough for a couple hdds, but might be a bottleneck for ssds.
