Simple answer is using electric mixers of some kind, or mixing the xanthan with other dry ingredients first.For small amounts like this, I have a small electric whisk (like this), like the kind that people use to froth milk. I sprinkle in the xanthan while running the whisk. I use a small tall glass (like a juice glass) for small amounts like the 2-3 Tbsp of dressing so it doesn’t go everywhere. I hope that helps :)
