We did real plates, cutlery, water glasses (which waiters refilled at the tables), and champagne flutes for toasts. Disposable cups for alcohol. The advice we were given is you could go real for things each person would need just one of. Cups for cocktails you’ll realistically need multiple per person (and that assumes staff is constantly washing dishes in the back).
