Congrats on the apartment! Great feeling isn't it? Cooking is simple! Baking is hard. Here is some advice from a chef of 25 years and a culinary school graduate. Recipes are not set in stone. Think of them more like a guide. as you gain experience you will understand this more. as far as utensils? i would go with a start set of some sort, one that has the essentials such as a whisk, flat spatula, maybe a pair of tongs, a slotted spoon, a large cooking spoon, a ladle. these things are cheap and can sit in a drawer when not in use. A SHARP knife. an 8 Inch Chef knife is my go too. It can tackle pretty much every job. most knives i have seen from wal mart are just not sharp enough. My knife of choice is Dalstrong. they are reasonably priced, well built, made in the US. You could easily spend 1000's of dollars of knives. But I own the Dalstrong Shadow Black series and it is AMAZING. a plastic cutting board for sure is a must. as far as what too cook in? A nice non stick frying pan or two will upgrade your game and your life much easier. Follow the care instructions and it will last you a long time. You can find pretty good frying pans out there for a reasonable price. Milk, rice, canned beans, cooking oil, spices (granulated garlic, kosher salt, cafe grind black pepper,any other spice or seasoning you enjoy or need, can collect them as you go) bread, cheeses you like (they last a while). when it comes to fresh produce, only buy what you know you are going to cook. it's expensive! white sugar, vinegar, ketchup, mustard, bbq sauce, tortillas. chicken is most likely your lowest priced protein out of the meats you find. it can be frozen for later use very easily.
