I just had this happen a while back and commented yesterday with what I used. Pasting here as well I had the same fear, that something would stop the seal but the sensor would show as closed. So with the contact sensor I put one part on the door and then tested the placement of the other part so it would read as closed if the door was truly closed all the way. There’s not much wiggle room so if it’s even barely open the sensor reports as open. Along with that I put the thermometer in the freezer. I then have an alert if the door sensor is open for more than 5 minutes as well as if the temperature goes above freezing for more than 5 minutes. I’m thinking of adding another condition that uses the average temp and alerts if the delta is higher than a certain amount but I haven’t decided if that’d be of much more use. I will add it’s been at least a month, maybe more and the battery still reports 100%. It may be reporting wrong, time will tell. But I also have an alert if the temperature becomes unavailable for 30 minutes. I used switchbot Bluetooth thermometers in the freezers since they are ip65 and have a low enough operating temperature they should be fine in a freezer with a M5Stack atom lite (esp home device) as a Bluetooth proxy in the garage to pick up the signals better. For the door sensors I used some Ring contact sensors because they are zwave and the closest repeater I have to the garage is zwave repeater but any contact sensor would work depending on what protocol you already use.
