I did basically the same thing you did and used an older HP elitedesk that was some office machine previously but, it only had 5 SATA ports available on the motherboard and here's a couple of things thar I did and so could you. Seeing how this pc will now be a home server then having things like a cd-rom, DVD player, etc aren't needed here and at least on mine those things also used the same serial/sata connectors so unplugging those unnecessary things can free up 1 or multiple SATA ports. This probably isn't the most ideal option to use but, you can purchase those HD enclosures that essentially allows you to put a 2.5"-3.5" internal HD into an enclosure that turns it into a a portable HD that also uses USB 3.0 which just let's you solve your no more sata ports problem by converting to use USB instead The other thing and you may not like hearing is to try finding larger HD's to swap out your low 256Gb drives for some 1+ Tb drives because you're very likely to burn those little 256gb drives relatively fast IMO.
