Make entire meal, Portion them into Tupperwares, label what they are, and throw them in the freezer. Frozen food basically never goes bad. You can defrost the morning of and put it in the fridge, or you can just throw it in a pot when you get home or the microwave. there'll be pretty much no change in texture or flavor. this works for all the curries, soups, vegetables, meats, pasta sauces, etc that I've tried. You can do rice as well and it turns out great as long as you put a wet paper towel/towel on top to trap the steam and microwave from 2-4min, depending on your vibe. I've heard it works with pasta but I personally haven't tried it. the only thing I've ever had any texture changes with were with silken tofu which turns rough and hole-y. you'll have to cook more in the beginning, but after a few meals you can basically make one or two big new meals a week and you'll have a ton of leftover variety to choose from.
