Maybe it’s in the code of canon law, or the text of whatever document codified the current process of canonization. A book on the process would probably cite it. However, you might be stuck because this person might be under the impression that science can basically account for everything. I’d recommend “How To Be An Atheist” by Mitchell Stokes. If they have this idea from the popular myth of science that science is this unassailable, absolute study of reality, it’s going to take a considerable disillusionment to chance that narrative.
