I'm doing the same thing, and the only way I stay sane is to think about it as a year-long project. I definitely agree with the suggestion to fully complete one section first. That way, you can figure out a repeatable process for stripping, sanding, staining, and finishing. It sounds like the Cobra is working well for you, but you might also try Smart Strip. You paint it on like Citristrip and cover it with plastic, but it works WAY better and faster than Citristrip. Is it a bit messy? Yes, but if you're just going section by section, it's not bad.
